The same recipe our family has been making since 1975. Peanuts are hand-coated in a spice mix of green chilli, curry leaves, and garlic, then slow-fried in coconut oil in small batches. Each jar crunches the way it should.

Dry-roasted without any oil, so what you get is just peanut, spice, and crunch. The light gram flour coat picks up the chilli, curry leaves, and garlic and gives it a flavor that's mild enough for everyday snacking but interesting enough to keep reaching in.
